Usually by the time Friday rolls around, I’m in no mood to fix a big supper.
This recipe is….Fast…Easy…Yummy…and Filling! Even the kids will like it.
Easy Chicken Verde Quesadillas
- 2 C Shredded Chicken (I used canned chicken breast)
- 1 Pkg. Flour Tortillas
- 1/2 C Salsa Verde
- 2 Tbs. Vegetable Oil
- 2 C Shredded Mexican Blend Cheese
- Salsa and Sour Cream for dipping
Preheat a large skillet over medium heat
Brush one side of a tortilla with vegetable oil, place oil side down in skillet.
Sprinkle tortilla with some of the cheese and chicken. Add several dollops of salsa verde. Cover with another tortilla and brush the top with vegetable oil.
When bottom tortilla browns and crisps up, carefully flip and brown the other side. Repeat until you use all tortillas.
Cut in triangles and dip in salsa and sour cream
